Abstract

São fornecidas aqui composições encapsuladas compreendendo um ou mais ácidos graxos poliinsaturados de cadeia longa (LCPUFAs) e pelo menos um hidrocolóide, em que a composição tem um teor de gordura livre de superfície menor do que cerca de 5%. Também são fornecidos métodos para estabilizar as emulsões compreendendo um ou mais LCPUFAs e para aumentar a eficiência do encapsulamento das composições compreendendo um ou mais LCPUFAs, os métodos compreendendo a incorporação de pelo menos um hidrocolóide nas emulsões ou nas composições.
