Abstract
Composições contendo ferro, agente tamponizante e proteína desnaturada foram preparadas, que são capazes de aumentar ferro sérico em um indivíduo. Por exemplo, microcontas secas por pulverização foram preparadas contendo ferro aprisionado dentro de uma matriz de proteína e ferro não ligado em uma composição tamponada que provê um efeito gastroprotetor, conserva ferro em forma Fe2+ mais disponível e melhora a biodisponibilidade de ferro em humanos com relação a veículos previamente conhecidos para administrar ferro para um indivíduo.
