Abstract
A presente invenção refere-se a uma levedura geneticamente manipulada capaz de fabricar um produto de fermentação usando sacarose como substrato de fermentação e processos de fermentação usando essa levedura. A levedura possui um gene de invertase exógeno e possui uma deleção ou ruptura do gene da atividade de PDC. Por conseguinte, a levedura é útil para a fabricação de produtos de fermentação diferentes do etanol a partir de substratos de fermentação contendo sacarose.
