Abstract
A presente invenção refere-se a uma nova forma de levedura compactada para inoculação direta na fermentação de um substrato de fruta ou vegetal, por exemplo, para a fermentação de bebidas, tais como o vinho ou a cerveja. Especialmente, a presente invenção refere-se à levedura compactada com um teor de matéria seca de entre 35% e 90% (p/p), de preferência em uma forma congelada, a um método para produzir uma bebida fermentada por inoculação direta de um substrato de fruta ou vegetal com a levedura compactada e a um recipiente compreendendo a levedura compactada.
