Abstract

A presente invenção está inserido no setor de óleos e gorduras comestíveis. Basicamente, refere-se a uma composição alimentícia de gordura vegetal utilizada na confecção de produtos alimentícios, tais como massas, margarinas, cookies, sorvetes, mélanges, caldos em cubos, cremes doces e recheios de produtos alimentares tais como bolos, biscoitos, bombons e produtos similares. E, mais especificamente, refere-se à produção de gorduras com baixo teor de ácidos graxos saturados a base de óleos vegetais e agentes estruturantes ricos em monoacilgliceróis.
