Abstract
SANITIZAÇÃO DE ALIMENTO. Trata-se do tratamento de plasma frio que pode ser usado para sanitizar a superfície de alimentos porosos. Surpreendentemente, tal tratamento pode ter pouco ou nenhum efeito na estabilidade oxidativa de revestimentos de superfície sensível que compreendem, por exemplo, gorduras, vitaminas ou outros compostos submetidos à degradação por calor, tratamento UV e/ou oxidação.
