A invenção refere-se a um novo emulsificante, compreendendo gelatina hidrolisada e gelatina de baixo bloom, a um método de preparação do mesmo, em que a gelatina hidrolisada e a gelatina de baixo bloom são dissolvidas e subsequentemente secadas, a produtos alimentÃcios compreendendo o dito novo emulsificante e ao uso do dito emulsificante.
