EMULSÃES DE ÃLEO EM ÃGUA COMPREENDENDO UM ÃCIDO GRAXO POLI- INSATURADO E MÃTODOS PARA FABRICAÃÃO DAS MESMAS.A presente invenção se ref ere à s emulsões de óleo em água, estáveis compreendendo um ácido graxo poli- insaturado, um emulsionante, água, um agente quelante de metal, um antioxidante e processos para a preparação de emulsões de óleo em água estáveis. As emulsões de óleo em água estáveis são substancialmente isentas de coalescência, floculação, maturação de Ostwald e formação de creme por um perÃodo de pelo menos cinco meses a uma temperatura de cerca de 4 ºC.
