PRODUTO DE CONFEITARIA CONGELADO COM UM ESTABILIZADOR NATURAL. A presente invenção refere-se a um produto de confeitaria congelado que compreende uma composição estabilizadora natural. O produto de confeitaria congelado tem uma expansão, de preferência, de 100% a 120%. O produto de confeitaria congelado compreende um teor de proteína relativamente baixo. A composição estabilizadora compreende gema de ovo, uma goma e, de preferência, um acidulante. O uso da composição estabilizadora é descrito. Um método para a fabricação do produto de confeitaria congelado támbém é descrito.
