Abstract
CAFÉ SAUDÁVEL E MÉTODOS DE PRODUÇÃO DO MESMO. A presente invenção refere-se a um método para produção de uma msitura de café e à mistura de café obtida por esse método, em que a mistura de café é caracterizada pelo fato de que uma bebida de café preparada da mistura de café contém quantidades elevadas de ácidos clorogênicos (CGA) e cátions de N-metilpiridínio (NMP) e, opcionalmente, baixas quantidades de ácido 5-hidroxitriptamidas carboxílico (C5-HT) tendo uma atividade antioxidante superior.
