COMPOSIÇÃO LÁCTEA FERMENTADA COM PROPRIEDADES BIOCONSERVANTES, PROCESSO DE PRODUÇÃO E USO DA COMPOSIÇÃO. A presente invenção apresenta uma alternativa de diversificação de produtos lácteos caprinos com adequados parâmetros indicadores sanitários. Mais especificamente, revela-se uma composição láctea com propriedades bioconservantes, obtida por fermentação de leite de cabra, prebiótico e edulcorante com a cultura iniciadora Streptococcus thermophilus QGE e a cultura nativa probiótica Lactiplantibacillus plantarum CNPC001. A presente invenção se situa no campo de tecnologia de alimentos.
