A presente invenção refere-se a um processo de obtenção de extrato de levedura, mais especificamente, Saccharomyces cereviseae, com alto teor de proteína sendo um processo otimizado, de alto rendimento, com diversas vantagens técnicas. Ainda, a presente invenção refere-se a produtos alimentícios como sopas, shakes, pastas, embutidos, iogurtes entre outros que compreendem o referido extrato de levedura.
