BOLO ESPONJA COM SUBSTITUIÇÃO PARCIAL DE FARINHA DE TRIGO E GORDURA POR COPRODUTO DA ACEROLA (MALPIGHIA EMARGINATA). Bolo esponja com substituição parcial de farinha de trigo e gordura por coproduto da acerola (Malpighia emarginata). A presente invenção diz respeito ao desenvolvimento de um preparo para bolo esponja com substituição parcial da farinha de trigo por coproduto da acerola (Malpighia emarginata). O produto tem como diferencial a adição de fibras ao preparo de bolo tradicional e outros componentes funcionais presentes nestes coprodutos como forma de enriquecimento de um produto préexistente.
