Abstract

FARINHA DE EIXO CENTRAL DE JACA: ELABORAÇÃO E CARACTERIZAÇÃO FÍSICO-QUÍMICA . A presente invenção propicia a elaboração e caracterização físico-química da farinha de eixo central de jaca (Artocarpus heterophyllus Lam.). A presente invenção constitui-se de um processo de secagem em estufa de circulação de ar a partir do eixo central de jaca para elaboração e caracterização da farinha. A invenção tem potencial aplicabilidade na área de alimentos, visando sua utilização na preparação de produtos para alimentação humana.
