A presente invenção refere-se a uma especialidade de extrato aquoso desconhecido no estado da técnica com a seguinte receita tecnológica: 83% de folhas de vinagreira e 17% de água potável. E por seu processo de obtenção caracterizado pelas seguintes etapas: classificação; pesagem 1; seleção; pesagem 2; limpeza; sanitização; enxague; braqueamento; resfriamento 1; pesagem 3; trituração; filtração; pasteurização; resfriamento 2; envase; congelamento; armazenamento.
