REQUEIJÃO ENRIQUECIDO COM FITOESTERÓIS. A presente invenção refere-se a um requeijão enriquecido com fitoesteróis e ao processo de obtenção do produto tradicional ou light. Trata-se especificamente de um queijo fundido proveniente de matrizes lácteas, preferencialmente de leite bovino e/ou caprino, caracterizado porser enriquecido com fitoesteróis de 2g e 4g por porção. A invenção apresenta o requeijão tradicional com 50% de gordura e admite-se a redução de até 25% do teor de gordura para a versão light. Oferecendo um produto com características desejáveis com aparência cremosa, homogênea, lisa e odor e sabor característicos, na qual apresenta-se com potencial redutor do colesterol LDL.
