A presente invenção propicia Produção de farinha de sementes de melancia africana (Citrullus lanatus var. citroides). O produto em questão apresenta o processo de obtenção de farinha a partir das sementes de melancia africana através da desidratação em secador convectivo em diferentes temperaturas. Destacando-se como uma alternativa de aproveitamento tecnológico e industrial das sementes, compotencial de aplicabilidade no desenvolvimento de novos produtos, buscando fontes nutricionais alternativas, como suplemento alimentar e sendo resíduos agrícolas importantes e normalmente desperdiçados.
