A presente patente de invenção trata da obtençao e purificação de Exopolissacarídeos (EPS) a partir da fermentação submersa Candida boidinii, tais compostos que aprsentam atividade anticoagulante reveladas no prolongamento nos tempos de coagulação dos ensaios TTPA, TP e TT, logo, com potencial uso na indústria de medicamentos, alimentos, insumos e equipamentos médico hospitalares quando a inibição da coagulação for desejada.
