Abstract
Elaboração de farinha de semente de jaca com baixo teor de fibras trata-se de uma invençãode aplicação na área de alimentos que se caracteriza por apresentar de baixo custo e fácilexecução resultando em um produto de alto teor nutricional. Devido à farinha possuirgrande versatilidade e ser isenta de glúten pode ser utilizada tanto no enriquecimento derefeições quanto na substituição de ingredientes principalmente para o público portador dedoença celíaca. Além disso, a farinha apresenta boa característica sensorial com gostoresidual inexistente influenciando no aumento do índice de aceitação do produto, bemcomo, o aproveitamento dessa matéria-prima impacta na redução dos desperdícios dosresíduos agroindustriais. Com base nessas características, a farinha possui grande potencialpara incremento na indústria de alimentos.
