Abstract
A presente invenção refere-se à elaboração de bebida alcoólica fermentada de murta. Produzida a partir da polpa de murta integral diluída com água. O produto em questão apresenta sabor e odor característicos, além de possuir características nutricionais ressaltadas e conter ingredientes com elevada atividade funcional e sensoriais similares aos produtos já comercializados. Diante de todos os benefícios supracitados, pode-se enfatizar que a utilização da polpa de murta para elaboração de bebida alcoólica fermentada contribui de forma significativa para o aproveitamento nutricional e tecnológico da fruta.
