Abstract
PROCESSO DE OBTENÇÃO DE HIDROLISADO PROTEICO APARTIR DE SUBPRODUTO DE PESCADO ORIUNDO DEMÁQUINAS SERRA-FITA. A presente invenção se refere ao processo de obtenção de hidrolisado proteico em pó a partir do subproduto gerado do beneficiamento de pescado na máquina serra-fita durante o postejamento dos peixes. O produto obtido a partir desse subproduto apresenta propriedades nutricionais, tecnológicas e bioativas podendo ser utilizado como ingrediente em formulações de produtos pela indústria de alimentos e farmacêutica.
