Abstract
OBTENÇÃO DE OVO EM PÓ POR SPRAY DRYER. A presente invenção trata de um método para a obtenção do ovo na forma de pó por meio da técnica de spray dryer. Neste método, o ovo foi seco em um spray dryer com temperaturas de entrada do ar entre 120 a 150ºC. Os pós obtidos foram caracterizados por atividade de água (aw), umidade, cinzas, minerais, lipídeos, proteínas e carboidratos. De acordo com os resultados foi verificado que houve conservação das características físico-químicas, indicando a viabilidade do processo descrito.
