PROCESSO PARA ACELERAÇÃO DO ENVELHECIMENTO DA CACHAÇA. É descrito um processo para aceleração do envelhecimento da cachaça, que reduz os aldeídos, furano e metanol, que provocam uma sensação de queimação ao beber a cachaça, impactando os caracteres organolépticos da bebida, de forma a prover uma bebida com diminuição significativa do sabor alcoólico e da agressividade da bebida, proporcionando uma efetiva melhora sensorial do produto, similar à cachaça envelhecida pelo método convencional.
