Abstract

PROCESSO PARA OBTENÇÃO DE UM IOGURTE ADOCICADO COMMELAÇO SABORIZADO COM TAMARINDO E AMEIXAA presente invenção trata de um iogurte adocicado com melaço,saborizado com tamarindo e ameixa, com aplicação na área de alimentos eprodutos alimentícios funcionais visando proporcionar alternativa em termossensoriais do produto, bem como agregando os benefícios da ingestãoconjunta da ameixa (subgêneros Sect. Prunocerasus ou Sect. Prunus) dotamarindo (Tamarindus indica L.), do Lactobacillus delbruekki subsp.bulgaricus e do Streptococcus salivarius subsp. thermophillus, auxiliando nadigestão gástrica.Para a obtenção do produto, foram realizadas nove etapas:pasteurização(1), adição de leite em pó(2), adição de melaço(3), novapasteurização(4), resfriamento(5), adição de fermentos(6), incubação(7),acondicionamento(8) e, finalmente, armazenamento(9).
