Abstract
A presente invenção trata da obtenção de uma massa alimentícia mista com substituição parcial da farinha de trigo por farinha de semente de jaca (Artocarpus heterophyllus L.) visando agregar valor comercial e nutricional, com redução de glúten e elevação do teor de fibras, a referida massa alimentícia. A massa alimentícia poderá conter de 10 a 15% de farinha de semente de jaca, além de água, sal e ovos (FIGURA 2). Para a composição da massa, pode-se homogeneizar os ingredientes em batedeira industrial seguida de moldagem e secagem. Trata-se de uma massa pronta para cozimento e consumo.
