A presente invenção refere-se a obtenção da farinha da polpa e óleo de semente de juá, fruto do Juazeiro (Zizyphus joazeiro Mart.). Por apresentarem composição física química e bromatológica satisfatórias para diversas utilizações, destacando o alto teor de Triptofano na farinha e de ômegas 3, 6 e 9 no óleo, podendo ser utilizados em composições alimentares, cosméticas e farmacêuticas.
