Compreende-se a presente patente de invenção a um processo para melhoria nutricional de nuggets com inclusão de subprodutos de frango e filmes de amido, tendo em vista o aproveitamento dos subprodutos do abate de frangos, notadamente a pele e a carne mecanicamente separada (CMS), e os filmes de amido modificado atuarem como melhoradores nutricionais do produto, por meio da aplicação de uma camada de filme lipofílico (amido modificado) ao redor do nuggets, antes da camada hidrofílica (amido nativo), impedindo assim a absorção de gordura e perda de umidade dos nuggets após a fritura.
