OBTENÇÃO DE CLARAS DE OVO DE GALINHA DE GRANJA E DE CAPOEIRA EM PÓ PELO PROCESSO DE SECAGEM EM CAMADA DE ESPUMA. A presente invenção utiliza ovos de duas espécies diferentes de galinhas, a de granja e a de capoeira, e a partir dos ovos obtendo-se a clara, sendo esta transformada em espuma através de agitação, sem a necessidade de adição de agentes espumantes, sendo a espuma destinada à secagem pelo método de secagem em camada de espuma, obtendo um pó como produto final.
