OBTENÇÃO DO SUCO EM PÓ DO CAJU (Anacardium occidentale L.) POR SPRAY DRYER. A presente invenção trata-se de um método para obtenção de suco de caju (Anacardium occidentale L.) na forma de pó através da técnica de spray dryer. Neste método, o suco de caju (Anacardium occidentale L.) foi seco em um spray dryer escala piloto, com temperaturas de entrada do ar entre 140 a 160ºC com adição de agente carreador maltodextrina e goma arábica em concentrações em massa entre 12 e 20%. Os pós obtidos foram caracterizados por pH, sólidos solúveis (ºBrix), atividade de água, higroscopicidade e teor ácido ascórbico (vitamina C).
