Abstract

OBTENÇÃO DO SUCO EM PÓ DA LARANJA (Citrus sinensis) POR SPRAY DRYER. A presente invenção trata de um método para obtenção de suco de laranja (Citrus sinensis) na forma de pó. O suco de laranja (Citrus sinensis) foi seco em um spray dryer com temperaturas de entrada do ar entre 140 a 160ºC com adição de agente carreador (maltodextrina) em concentrações em massa entre 15 e 25%. Os pós obtidos foram caracterizados por pH, sólidos solúveis (ºBrix), atividade de água, teor de umidade, teor de ácido ascórbico (vitamina C). O produto final apresentou conservação das características físico-químicas em comparação com o suco in natura.
