?MÉTODO PARA OBTENÇÃO DE HIDROLISADOS DE CLARA DE OVO DE GALINHA DE CAPOEIRA COM ATIVIDADE ANTIOXIDANTE?. Esta invenção descreve um método de obtenção de hidrolisados com atividades antioxidantes provenientes da clara do ovo de galinha de capoeira. Empregando-se a protease produzida por Aspergillus avenaceus URM 6706 para a hidrólise da clara do ovo que transcorreu por até 24 horas. O potencial antioxidante dos hidrolisados foi avaliado frente aos radicais ABTS e DPHH, e pela atividade quelante dos íons Fe2+ e Cu2+. Tendo a metodologia propiciado a obtenção de hidrolisados provenientes da clara do ovo de galinha de capoeira com alto potencial antioxidante.
