A invenção ora apresentada diz respeito ao uso de isoladoproteico de soro de leite, montmorilonita, glicerol e metabissulfito de sódio, para aelaboração de revestimento biodegradável de fonte natural e renovável, visando aextensão da vida útil de ovos comercializados in natura (em casca) armazenados àtemperatura ambiente.Entre as características inovadoras está a utilização de ácidocítrico para ajuste do pH do revestimento à valores baixos (3,2), o que proporciona umrevestimento com boas características mecânicas e baixa permeabilidade ao vapor deágua. Testes mostraram que ovos revestidos com essa solução apresentaram vida útilmaior que 40 dias quando estocados a temperatura de 25oC e umidade relativa de 70%.
