Abstract

A presente patente de invenção trata de filmes ativos contendo enzima poligalacturonase que preserva a atividade catalítica sob armazenamento prolongado. Os filmes foram capazes de promover a hidrólise de ácido poligalacturônico em solução aquosa e poderão ser empregados em processos industriais ou em embalagem de produtos de origem vegetal, quando a hidrólise de substâncias pécticas for desejada.
