A presente invenção refere-se ao mel de abelha gelificado constituído de mel de abelha in natura ou processado acrescido de hidrocolóides, como agentes gelificantes, para facilitar o manuseio do mel de abelha, ampliando o consumo direto e a sua aplicação em indústrias alimentícias, farmacêuticas, químicas, medicinais e cosméticas, sem alterar as suas propriedades funcionais e nutricionais. Entre as características inovadoras está o uso de soluções de kappa-carragenana e lota-carragenana a 3,0% em mistura com o mel in natura.
