IOGURTE ORGÂNICO ADICIONADO DE SUCO E FARINHA DE CASCA DE UVAROXAA presente invenção trata de um iogurte orgânico rico em fibras ecompostos antioxidantes oriundos de coprodutos da fabricação de suco de uva.Foram testadas várias misturas variando as quantidades de oligofrutose (fibraalimentar solúvel), farinha de casca de uva roxa orgânica, e suco de uva roxaorgânica, combinados ou isolados. Após análise da composição proximal, físicoquímica,propriedades sensoriais, de textura, e funcional (atividade antioxidante eteor de compostos fenólicos totais), a metodologia de superfície de resposta foiutilizada para otimizar a formulação do iogurte orgânico, no intuito de oferecer umproduto com propriedades nutricionais e funcionais otimizadas.
