Refere-se a um processo de obtenção de microcápsulas (M) estáveis, a partir do preparo,mistura de fases aquosa (A) e orgânica (O), seguidos do processamento da misturaobtida (8), de sua homegeneização (E10) e secagem por spray drying (E11); para aencapsulação de ativos lipossolúveis, como o eugenol (1); cuja parede é constituída pelacombinação de proteína do farelo de arroz (6), albumina sérica bovina (7) e carragena(4). As microcápsulas obtidas (M) apresentam superfícies esféricas com ausência defissuras ou deformações e, que, por serem biodegradáveis e biocompatíveis sãoutilizadas como carreadoras de aditivos naturais em alimentos.
