A presente invenção refere-se a clarificação do mosto lupulado e da cerveja obtida pelo uso de amidos modificados contendo cargas negativas. Esses amidos são obtidos por processos de oxidação ou por processos de fosfatação. Esses amidos com propriedades clarificantes são introduzidos na etapa de fervura do mosto resultando em cevejas limpidas.
