A presente invenção diz respeito a pães enriquecidos com galactomanana os quais contêm galactomanana de Adenanthera pavonina Linn. como substituinte do óleo na formulação da massa dos pães, visando o aumento no consumo diário de fibra solúvel para melhora do perfil glicêmico da população, inclusive diabéticos. Os pães enriquecidos com galactomanana da presente invenção é um alimento funcional que pode contribuir ainda para o controle da saciedade, controle glicêmico, controle do perfil lipídico e melhora do trânsito intestinal.
