A presente invenção DESCREVE NÉCTARES DE FRUTAS E FOLHAS DA VINAGREIRA (Hibiscus sabdariffa L.) E SEU PROCESSO DE ELABORAÇÃO. Um dos néctares é produzido utilizando polpa de frutas e extrato das folhas da vinagreira e o outro polpa de frutas e chá das folhas da vinagreira. Esses néctares apresentam-se como mais uma alternativa saudável pela associação dos benefícios nutricionais das folhas da vinagreira (como ferro e compostos antioxidantes) com os das frutas, tendo aceitação sensorial por parte do consumidor que não ingeriria um néctar somente de folhas da vinagreira em virtude do seu sabor ácido e adstringente.
