Abstract

ENCAPSULAMENTO DE CHÁ VERDE (Camel! asinensis) POR "SPRAY DRIER" COM GOMA DE CAJU EIRO/MALTODEXTRINA" A invenção ora apresentada diz respeito à proteção dos compostos bioativos, contidos no extrato de chá verde, a partir do processo de microencapsulação, o qualutilizou a goma do cajueiro e a maltodextrinacomo material de parede em três diferentes proporções. Entre as características inovadoras estão o uso de maltodextrina, substituída em parte por goma do cajueiro, a qual é um produto barato e facilmente encontrado na natureza, auxiliando desta forma na proteção dos compostos bioativos do extrato de chá verde.
