A presente invenção relata o processo de fabricação de cápsulas gelatinosas moles a base de pólen apícola monofloral de coqueiro tamisado e óleo de coco constituindo um alimento funcional rico em fibras, proteínas, lipídios, carboidratos, açucares redutores (glicose e frutose), minerais, vitaminas e aminoácidos essenciais, além de ácidos graxos de cadeia média e a caracterização do biomarcador químico (flavonoide Isoramnetina-3-O-neohesperidosideo), sendo uma inovadora formulação de um produto natural, de qualidade e excelente e aceitação para a suplementação dietética.
