Abstract
APLICAÇÃO DE ÓLEO ESSENCIAL DE TOMILHO (Thymus Vuígaris L.) COMO AGENTE ANTIOXIDANTE E INIBIDOR DE ESCURECIMENTO PARA ÓLEOS E GORDURAS VEGETAIS. Os óleos essenciais de algumas espécies vegetais como o tomilho, possuem compostos com capacidade antioxidante e de inibição degradativa de diversas substâncias que conferem cor. Por isso a presente invenção trata da aplicação do óleo essencial de Tomilho como agente antioxidante e inibidor de escurecimento em óleos e gorduras vegetais, durante o armazenamento e conservação, bem como no processamento, aquecimento e utilização alimentar, visando à redução dos processos degradativos que comprometem a utilização e aplicação destas matérias-primas.
