Inclui elementos que realizam o aquecimento da água no interior do próprio produto e altera a polaridade, efetuando assim a aceleração da secagem e a eliminação das bactérias, sendo vaporizado pequenas quantidades de água pela superfície no início da operação e a medida em que o aquecimento é aumentado, cria-se a pressão interna e externa, favorecendo com isto, a homogeneidade de secagem, além da rapidez no processo, e uma vez atingidas as temperaturas desejadas, de acordo com o produto a ser tratado, a água migra para a superfície e será removida por uma corrente de ar
