A presente Patente de Invenção diz respeito ao Processo de Fabricação de Goma Xantana, é caracterizado por ser constituído pela utilização de leite rejeitado autoclavado, fervido, ou coalhado no qual é adicionado ureia e mono-hidrogeno-sulfato de potássio, K~ 2~ HPO~ 4~ sendo processado por uma fermentação aeróbica no período de 96 horas, com pH entre 6,0 a 7,0 para, sendo que na sequência, é extraída a goma Xantana com a utilização de Etanol Comercial.
