A patente de invenção refere-se à obtenção e uso inédito da fração do refino do óleo bruto de mamão (carica papaya) rica em resíduos graxos insaturados, apropriado para o desenvolvimento e preparação de alimentos convencionas e/ou nutracêuticos e seu uso com adjuvante para reduzir os níveis de colesterol do sangue e na formulação de óleos, azeites margarinas, manteigas, maioneses, molhos, tornando os produtos resultantes baratos.
